酸辣土豆丝 - spicy potato strips
follow: 小高姐’s recipe
- 2-3 potatoes
- 2 red & green bell peppers
- peel the potatoes and cut them into 丝 - strips
- put it in a bowl with water and add white vinegar - 2 tablespoons, roughly
- cut the pepper into similar strips and set aside
- get a scallion and cut it at a steep angle into those kinda chunk things
now time to fry
- put the wok on medium flame
- add oil
- add 花椒 - sichuan peppercorn
- crush up some dried chilis into that bih
- let it ruminate for a bit, get the spicyness all up in that oil
- remove the spicy stuff using a slotted spoon or similar
- throw the angle-chopped scallions in there
- NOW, time for the main character: add the potatoes into the wok
- add the bell pepper strips
- when it’s almost ready, add in a tad bit more white vinegar
- add a tiny bit of sugar to balance out the sourness of the vinegar
- add a bit of salt at the end
