酸辣土豆丝 - spicy potato strips

  • 2-3 potatoes
  • 2 red & green bell peppers
  • peel the potatoes and cut them into 丝 - strips
  • put it in a bowl with water and add white vinegar - 2 tablespoons, roughly
  • cut the pepper into similar strips and set aside
  • get a scallion and cut it at a steep angle into those kinda chunk things

now time to fry

  • put the wok on medium flame
  • add oil
  • add 花椒 - sichuan peppercorn
  • crush up some dried chilis into that bih
  • let it ruminate for a bit, get the spicyness all up in that oil
  • remove the spicy stuff using a slotted spoon or similar
  • throw the angle-chopped scallions in there
  • NOW, time for the main character: add the potatoes into the wok
  • add the bell pepper strips
  • when it’s almost ready, add in a tad bit more white vinegar
  • add a tiny bit of sugar to balance out the sourness of the vinegar
  • add a bit of salt at the end
